Rest assured I won't be giving up the day job. On reflection, maybe I should try something easier next time ?

  2. Sponge cake is not easy. I find British sponge not truly sponge - they're too heavy and hard... :/

  4. Agreed - actually until now I never equated 'Sponge Cake' with the the texture of a sponge ! You're right though - the ones here are far too heavy (but for some reason if we have one that is light then we think we're being short changed for some reason !).
